Allspice is the dried berry of an evergreen tree indigenous to the Caribbean and Central America. Use allspice in pickling liquids for cucumbers, beets, onions or green beans. Its also great for seasoning the brines for larger cuts of meat like pork roasts and whole chickens.

The whole berries add depth of flavor to slow-cooked corned beef and cabbage, pot roasts and stews. Fragrant allspice can also set the tone for a cozy evening of hot rum toddies, spiced red wine or mulled apple cider.
